Have a look in DB Bahn, it lists various connections from Bellegarde(Ain) to Crest which may be suitable. The last train only connections depart at Bellegarde at14:00 arrive Crest 18:29.

Maybe have a look north or southbound through Berkhampsted (and at other locations) to really appreciate the leaning at full speed, either looking alongside the the window along the train or through the carriage, its very noticeable.

Before covid, I don't know about since, but to my mind Worksop was a very important railway location because of the cafe on platform 2. Bacon or sausage rolls at its best or a full English. I hope it was able to continue after covid shutdown.

If you want to see freight at Bury St Edmunds, then use Stowmarket instead, side gate on the Norwich bound platform is open, and 'maybe' something headed to or from Norwich, intermediate platforms at Elmswell and Thurston are all open all night, no staff, no passengers, no nothing.
