As for when to travel, well the above tickets have no restrictions or ties to any specific train via Settle/Appleby so just punch in your times on NRE, making sure you put in Settle or Appleby as a "via" and see what suits you.
Change will be in Leeds no doubt from platform 17 all the way over...
Try putting in via Settle in the extra options and see if it does then.

I once got round this by buying GNER "gift vouchers" to buy a ticket, I then gave that code to the person miles away who needed to collect the tickets and he put his bankcard in and then the code and the tickets are dispensed.
