I think Northern Ireland counts on the Friday, and some of the remoter Scottish seats don't come in till around mid-day Friday.By 3-4am, you've got a pretty good idea.
For General Elections they have to count overnight; local elections they've got more scope to do it the following day(s)
It only matters if the result is close.
There's also the trend for Labour to rack up an early lead from urban counts, and then fall back relatively as the rural counts come in which are more likely to go Con/Lib-Dem.
But then there are many new factors this time (Reform, Green, SNP etc).
