Nothing made "the" first carrier landing in 1975. Planes had been landing on carriers for years. Ha ha. When I see the correct answer to what I think you are asking it will do my head in because I am sure I know it.

USS Nimitz was commissioned in 1975. I'm guessing your question refers to the first aircraft to land on her. With it being the seventies an F4 Phantom would make sense.

I do remember hearing about a Vietnamise Air Force, or army (i cant remember which) officer landing a Cessna bird dog on an American Carrier, I think he was trying to get his family to safety after Saigon fell to the NVA.

Close enough - Major Buang-Ly in an O-1 Bird Dog made several passes and became the first, and so far only, RVNAF pilot to make a landing on a carrier. This is notable because he had never been to sea before and had never seen a carrier except on TV and in a newspaper. In a rather bizzare turn of events, a second one was recovered later that afternoon!

What is VP8LP and what event did he report?

The name of the actual user won't come to mind at this point in time, but VP8LP is the callsign of a ham radio user on the Falkland Islands.
Given the location I can only assume that he reported the illegal occupation of the islands by Argentine forces in 1982.

HMS Sheffield, HMS Ardent, HMS Antelope, HMS Coventry, SS Atlantic Conveyor, LCU Foxtrot Four were all lost during the war - RFA Sir Galahad was sunk by a spread of torpedoes from HMS Onyx amidships on the starboard side

Your list contains all 6 vessels on my list. The list for some reason neglects to mention the LCU, so you get a bonus for that (weather you want to see a video of me doing the hornpipe though is another matter ).
To note: HMS Ark Royal asked weather I was counting civil and military vessels and if the date of sinking made a difference. I answered that all vessels counted, and that to qualify the vessel had to have been sunk as a result of enemy action which took place between 2nd May and 14th June 1982, regardless of when the vessel finally foundered.
