DB announced this morning that due to Eurostar's delay in implementing their new system, Sparpreis London tickets will continue to be available for travel up to 15.01.2020. Booking will be available starting 22 October.
In Poland, PKP international ticket offices can issue Interrails, though you may have a long wait while the agent figures out how to do it!
In Bydgoszcz, we also sell them at the Polrail Service ticket window (#9 at the Bydgoszcz Główna railway station).
Here in Poland you will still see that at signal boxes and manned stations with a signalman. Such locations also have a spotlight aimed at the running gear.

In terms of train fares, it would be less expensive for you to visit Szczecin as it falls under the VBB tariff. (11 Euro one-way, 22 Euro return; the Berlin-Stettin-Ticket also includes public transport in Szczecin, so you can explore the tram network!)

Most PKP IC 2nd class tickets have a tiered pricing. When they go on sale (30 days before travel) they are 30% off, then drop to 20% off, 10% off and in the days leading up to travel are sold at full (base) price, which is what you'd pay at the station. The early-purchase discounts don't apply...
There are several connections daily via the Lichkov crossing. Two or three connections are required to reach Prague, but it's the best option.
Travelling via Bohumin or Dresden takes you far out of the way.
Checking in the DB internal system, I can get a SparNight for a Double on this train up to 30 Sept. For dates after that, it's showing as too early. So I'd guess they haven't loaded the inventory for after that date yet. (Price is 238-278 Euro for 2 persons.)
Keep in mind, however, that this does NOT qualify you for the student rate (51% discount) on trains in Poland.
