Something has definitely gone wrong somewhere, but whether it's TfL or a bank is unclear. A visitor to my site had travel from Saturday taken on Sunday and again on Monday this week.
Buses should get updated within 30 minutes like stations, but if the bus is in a poor signal area it might take a bit longer. I think it's unlikely that you'll be charged for the first journey.
The 60+ Oyster photocard is literally an off-peak zones 1-9 travelcard. You cannot add credit and can only use it on some TfL services beyond zone 9.
The zip 5-10 photocard is a PAYG Oyster card which happens to charge zero for the vast majority of it's journeys.
Because the fares are zero for the vast majority of journeys. The last thing TfL want is bad publicity from families when an inadvertent failure to touch renders a card unusable at barriers because it has a negative balance. It's also why all Oyster cards get no deduction on entry at Heathrow...

Beyond zones 1-9 TfL don't care. It's the TOC which is losing money if they don't check.

You can load custom period travelcards onto Oyster, yes. Choose "Odd period travelcard" from the dropdown once you've said you want to buy a travelcard.
