The issue is nearly everything is unit operated these days which is not flexible in terms of adding and removing single cars in a short timeframe. When everything was loco hauled carriages got swapped and changed far more often and quickly.

It is not due to wear and tear, but starting cold. They were designed to only be switched off for maintenance and just be left ticking over when not in use. They don't use much diesel while idling and diesel was very cheap back then. When they start up they burn fuel to warm up because there...

As far as I know not much fuel is consumed when a diesel engine is idling. The 37s were designed to never be switched off unless for maintenance.

Don't some named trains have different catering?

The railway uses different traction types when they are required. There are many cases where newer stock has been permanently replaced with older stock.
