No, I don't think this is practicable or sensible to do be done as a matter of course.

Due to the layout, you can only reverse the set when going southbound.....

An Edinburgh <-> London service can be reversed in either northbound or southbound directions.

Either way, you'd be approaching the station from the east, and departing the station from the east, and using the High Level Bridge.

Edit: Looks like the confusion was cleared up in subsequent postings anyway.

You'll be adding at least 10 minutes to the journey time in each direction (extra running time via the High Level Bridge plus time for driver to change ends). Which is more time than it ordinarily takes to walk to the First Class part at Edinburgh today. And you've broken your Edinburgh turnround time or your paths north to Aberdeen/Inverness.

You learn something new every day. Which platform is it at Haymarket that's reversible now?

I'm pretty sure all of them are. From memory 1, 2 and 4 all have signals at or close to either end.

Edit: Had a look at the SA and it looks like it's just 1,2 and 4.
