With the few remaining station buildings in Edinburgh:

Edinburgh Princes Street - remaining station building integrated with the hotel built above it.
Newhaven - office
Leith Central - the remaining buildings above the shops that were originally for station use, have been turned into a health centre.
Leith Citadel - youth centre
Pinkhill - Office for a 2nd hand car dealership I think
Joppa - Looks like its in private use and is either disused or used for building storage
St Leonards - goods shed was a cafe for many years, is now going to be turned into a whisky distillery/visitor centre
Granton - disused, but about to be turned into restaurant as part of a wider development of the area
Trinity - now a private house

Those are the ones I can think of from the top of my head.

Between the parallel lines
Here are a few random ones:

Darsham - Youth/charity residential centre
Hever - Tech company of some sort, including "overflow" office space in an old railway carriage at the back of the (impossibly large) station car park
Barnstaple - A pretty pleasant cafe which also seems to be frequented by a fair few people other than railway passengers
Glenfinnan - A good little museum about the local railway and its construction
Edenbridge Town/Crowborough Goods Sheds - Both builders' merchants
Acle - Self-catering accommodation
Coombe Junction Halt - Phone box (disused...)
