Brunel's tunnel at Rotherhithe - now part of London Overground - is older.

But it was originally a foot tunnel and wasn't used by trains until 1869 - and whether the Overground is part of the Underground is debatable

(and going back to Cheriton, is it really a 'platform' in the traditional sense?)

Neither of those.
The Metropolitan was certainly the first substantially underground line. But elsewhere, one important section of today's LU system had already been operating as a railway before the Paddington/Farringdon line of 1863. (You may surmise this is one of those bits of the Underground which is not underground)

I think "Platform 5" is the name of a pub or shop adjacent to a station.
I have seen a "platform 5" pub adjacent to Haymarket ( Edinburgh ) station. I think there are others elsewhere.

Theres also a Platform 5 brewing company underneath Newton Abbot though I cannot work out which platform

Llandudno Junction. The bus stop in the car park is given the name Platform 5, but the railway platform it is adjacent to is Platform 1.

Sudbury & Harrow Road operated by Chiltern.

By quite a large margin too, if you can believe the ORR usage statistics (SUD had <50% of the passengers at the next least used, South Greenford).

The Lynton and Barnstaple Rly and Colne Valley &Halstead became part of the big four on 1/1/23
Metropolitan Railway became part of LPTB in 1933.
I agree Mid Suffolk Light Railway became part of LNER in 1924.(I had not thought of this answer)

I was actually looking for North Staffordshire Railway and Caledonian Railway which became into the big four in July 1923.
