Stratford definitely from a passenger perspective, which is what I think the O/P means - not in terms of depot size etc...!
Others which seem to have risen in prominence:
Oxford - again historically under-platformed! Getting Chiltern soon and one hopes the new bay will be revisited too.

And Banbury! Yes, well, I have thought for years that a second "Up" platform could easily be achieved, the north end platform face is still there although trackless, and the south end bay is there, be-tracked and in occasional use. The up platform canopy structure is in the way of simply linking these two, and in my view it shouldn't be disturbed (historic building, you know) but if the platforms were extended out (eastward|) a yard or two, (there's plenty of room) then the two roads could be re-aligned and joined up and - Voila! Do they need it though? If they had it would they use it? It would increase flexibility of use of the station though, and might encourage further development.
