Hi! I have the return portion of a York to Sheffield ticket, would this be valid If I was going Leeds to Derby? I know I would have to get a Shefield to Derby ticket!

You don't say which return you have, but assuming it's a period return it can only be an SOR. Normally it would be cheaper to excess over-distance this return portion, but Sheffield-York SOR costs £18.80, while a Derby-York SOR costs £72.00 so it would cost you £26.60 to upgrade. So yeah, just buy a single Sheffield-Derby CDS is £8.40.

If you were on a train that had previously called at York, and calling at Sheffield, then yes. If not, then we need to check the routing guide.
York and Sheffield Group are both routing points.
The routing permissions for York to Sheffield Group are: ER+YL, NE+YL and SH+TP.
Looking at the maps, ER+YL gives:
York-Doncaster-Swinton-Meadowhall-Sheffield
York-Selby-Doncaster-Swinton-Meadowhall-Sheffield
York-Selby-Gilberdyke-Goole-Doncaster-Swinton-Meadowhall-Sheffield

NE+YL gives:
York-Pontefract-Swinton-Meadowhall-Sheffield
York-Leeds-Wakefield-Swinton-Meadowhall-Sheffield
York-Harrogate-Leeds-Wakefield-Swinton-Meadowhall-Sheffield

SH+TP gives:
York-Leeds-Huddersfield-Barnsley-Meadowhall-Sheffield
York-Selby-Leeds-Huddersfield-Barnsley-Meadowhall-Sheffield
York-Leeds-Wakefield-Huddersfield-Barnsley-Meadowhall-Sheffield
York-Selby-Leeds-Wakefield-Huddersfield-Barnsley-Meadowhall-Sheffield
York-Leeds-Ponterfract-Huddersfield-Barnsley-Meadowhall-Sheffield
York-Selby-Leeds-Pontefract-Huddersfield-Barnsley-Meadowhall-Sheffield

In terms of the direct routes from Leeds-Sheffield, if you are not on a direct York-Sheffield train which you join at Leeds, you are only valid on trains via Wakfield and Swinton, ie the majority of Intercity trains which do not call at Doncaster.

Assuming you have a return portion of a Sheffield to York (i.e. a York to Sheffield ticket ;)) then yes it is fine as Leeds is a valid route for York to Sheffield.

York (- Selby) - Leeds* ((- Pontefract) - Wakefield Kirkgate) - Huddersfield - Barnsley - Sheffield
York (- Harrogate) - Leeds - Wakefield Westgate - Swinton - Sheffield

*Strictly speaking, going via both Harrogate and Huddersfield is not valid but given that you'd have to change at Leeds after going via Harrogate anyways no-one would ever know...
