Had a think and presumably the reason for a 3rd platform is, in effect, to make a loop so a fast train can overtake a slow one. Correct?
That’s part of it. Also means that terminating trains don’t have to shunt north to cross over and reduces the number of level crossing operations. Wasn’t there talk of eliminating the crossing anyway?

Yes. See the planning app linked to in post 124 for details.

Hadn't realised some trains terminated there.
They arrive on the northbound line, offload, then shunt over at the level crossing/signal box, then in to the sidings at the newly converted flats. They then change direction and come back in to the southbound platform.

Also means that terminating trains don’t have to shunt north to cross over and reduces the number of level crossing operations.
I imagine it would need points to go in to the terminating platform from the northbound line, plus, like Carnoustie, a changeover to go back south again?
