I don't get your point. That surely is true for all rail vehicles

If you're waiting for a 08:00 bus every day and on some days a single decker appears and on other days a double decker appears which are you more likely to get a seat on? It's similar if it's a train and a Pacer some days and a Sprinter others - a 155 has around 50% more seats than an ex-ATN 142.

Its also another reason why Northern and TPE shouldn't be ever merged despite that as a suggestion by at least 1 frequent poster on here.

When TPE was part of Arriva Trains Northern (first time around) you never saw anything other than a 158 on a TPE service unless the alternative would be cancellation, and that's despite the rest of the network essentially operating a random unit generator.

Possibly but would be getting IC class trains on TPE if they had remained part of Northern I seriously doubt it, and I come from the era of BR subbing a Railbus on TPE Hull workings quite frequently.

Depends what you mean by "IC class". If this is about door positions, thirds probably does suit TPE better than end doors due to the mixed traffic. If they'd been part of Northern I'd expect there would have been a much larger Class 195 order, which would have been just fine.

That's not true. All North East and Liverpool services were booked as 158s but as already mentioned 156s were booked to operate some services between Manchester and Hull and between Blackpool and Yorkshire (the Blackpool-Yorkshire service got a TPE branded timetable booklet under ATN and appeared on the TPE route map.)

Surely the biggest reason for TPE's 185s not being Intercity is they have a top speed which is on a par with a modern local/regional train, not on a par with a modern Intercity train.

Then the LHCS isn't InterCity either.

The mk5 carriages are good for 125mph, it's just the locos TPE will initially use are only 100mph capable. The TPE franchise agreement hints at the 68s being temporary but considering the delays and possibly scaling back of electrification they might end up being semi-permanent. The 185s are limited to 100mph even if you attached a loco or other multiple unit which can do 125mph.
