That's correct, you were charged £17 which is the peak fare from Canary Wharf to Gatwick Airport.
Multiple legs of the journey get combined and it is the initial touch-in time that determines the type of fare (peak or off-peak).

Yes I have a contactless card (and an Oyster with railcard discount for that matter) so this is not a problem.
I have now booked a flight on the 1st January (Monday) instead as this allows me to get from Aberystwyth to Gatwick on the same day, so there will be no fuss with breaking the journey...

Not true. When I was last in Paris (~1.5 yrs ago), RER stations had barriers even at interchanges with Metro. You need a ticket to enter and exit the RER stations (whereas for the Metro, you only need one to enter).
