As far as I'm aware, those are the only diesel-hauled/propelled services remaining....apart from occasional heritage services - particularly on the spectacularly-scenic Sulmona-Carpinone line (The so-called "Trassiberiana Italiana").

There are still lots of electric loco-worked InterCity, Regionale and Regionale Veloce services around the country, but they are also rapidly being replaced by units.

Electric hauled is still of interest to me if combined with drop windows. I assume I'm more likely to find that on Regionale than Intercity.

I'm afraid that all the remaining Regionale stock has been refurbished and fitted with air-conditioning.....although some of the windows in the MDVC and MDVE stock can be opened by the the capo treno in the eventi of an air-con failure

Can confirm all the above to be accurate having spent a couple of weeks in Italy in September.

Sadly nearly all Regionale trains now modern low-floor type units. I did encounter some loco hauled ones running on the line between Perugia and Foligno, with an E464 loco on each end. Hopes for an openable window were briefly raised when I noticed there was one on the bike compartments intergrated into the "blank" end of those locos but these areas were locked off from the rest of the train.

Also travelled on a loco hauled intercity from Terontola to Venezia (train bound for Trieste I think).

It's worth looking out for the various mainline heritage ("Treno Storico") services - I was lucky and there was one on a convenient day for me; it ran from Milan to Lecco and back. Very easy to buy tickets (the train simply appeared in the Trenitalia journey planner app and I could buy a ticket like it was a normal train) and not at all expensive either.

What routes are they to be found on?
Firenze SMN-Borgo San Lorenzo via Pontassieve - a very scenic route through the foothills of the Appenines. Three - sometimes four - peak trains per day.

EDIT: The three normally-diagrammed afternoon/evening departures from Firenze are the 15 55, 16 43 and 17 55....with the 14 19 and 19 55 sometimes included.

904 was still doing the peak diagram to Ede-Wageningen in August, but one of our helpful Dutch contributors will be along to confirm in due course. (It's a lovely Valleilijn colour!)

I think the peak diagram is 2x round trips Monday - Friday, Amersfoot Centraal - Barneveld-Zuid, in the morning only; as far as I know, it doesn't run to Ede-Wageningen.

It's run today on the normal diagram (a pictogram of the allocated traction type is shown on the NS app, on the day itself)

0655 & 0755 from Amersfoot
0724 & 0824 from Barneveld-Zuid

It's planned in the morning only, but today it's still running at 16:50, probably because one of the other trains is broken. Btw, you should not trust the rolling stock indicated in the app, as it only shows the planned stock, not actual one.

Not scheduled, but it does occasionally happen. Early last month it was even running on a Sunday afternoon, but Keolis doesn't provide realtime rolling stock information as Bemined already mentioned. There is a webcam of Amersfoort Centraal however where you can check.

There was a defective train earlier this week, so likely that's why the Plan V is in use at the moment.
