Whilst trains don’t actually terminate there, Chandlers Ford is the advertised terminus from Salisbury/Romsey over Eastleigh or Romsey. Chandler’s Ford is used to prevent passengers boarding/staying on the long way round the loop. Same as Redbridge and Southampton Central for trains Salisbury in the other direction.
lots of exaples of that - Strawberry Hill, for example.

I have seen a train to Aylesbury via High Wycombe display "Little Kimble" on the front - this despite the only station on its route from which it would not be the best/only service to Aylesbury being Marylebone, where no-one sees the front of the train anyway.

There have been other examples in the past, where the penultimate stop is shown to avoid misleading passengers for the ultimate destination into taking that one instead of the fast train - eg Foxton (Cambridge), Addlestone (Weybridge), Frimley (Aldershot) Grange Hill (Hainault). But the practice seems to have fallen into desuetude, with nonsenses now like outbound Kingston roundabout services being advertised at Vauxhall as going to Waterloo, and Aberdare to Merthyr Tydfil services being advertised as such throughout, when it is far quicker to change at Pontypridd rather than go round the Llandaf - Cardiff - Danescourt loop

A few years ago, some Scotrail services from Edinburgh to Aberdeen went one station further and terminated at Dyce. Very confusing if you didn't know where Dyce is - or misheard it as "Diss".

The OP asked about trains terminating one station beyond one station beyond a better known location, which I took as slightly different from one station beyond a busier station. So cases like "Cambridge North rather than Cambridge" perhaps don't quite count, as the location (Cambridge) is the same.

Regular Piccadilly line trains that go into Cockfosters Depot from Oakwood (one stop before the end of line).

Same on the Central line with Ruislip Gardens - and both ends of the Jubilee line with West Ham and Canons Park.

Non-scheduled workings into Hammersmith 24rd and Watford 24rd (Goldhawk Road and Croxley). Hillingdon used to qualify but the facility to go straight into Uxbridge sidings was removed some time ago.

Similar patronage but Gordon Hill (Enfield Chase). The latter being named after the town and nearer the town centre.

During London Bridge building works in the 2010s some peak hour trains from Tulse Hill direction terminated at South Bermondsey instead of London Bridge. South Bermondsey being less of a destination than Queens Road Peckham where people could change for London Overground.

A twist in the other direction is the morning Kings Sutton - Marylebone service (train comes straight off of Banbury depot, IIRC used to come into service at Bicester)

What's happened to the five intermediate stations (Mauldeth Road, Burnage, East Didsbury, Gatley and Heald Green)?
Depends how specific the question is as number of services don’t stop at the intermediate stations with the airport being the next station stop after Piccadilly, I guess the same applies to Birmingham New Street/International which has been posted.

Fair enough whilst South Bank is closed in the Redcar direction.
I did actually post that it wasn't anything to do with South Bank being closed, then I realised you meant that South Bank being closed meant the "one station" rule was valid!
I should read thread titles more carefully!
I was also going to suggest Great Ayton, but whether that's much less known than Nunthorpe I'm not sure (they're about the same size).

A possible Scottish one: Bathgate (Livingston)?

Technically, I would class Cardiff Bay as Cardiff Queen Street is better known than Cardiff Bay. Same with Wrexham Central being less well known than Wrexham General.

On Sundays I know quite a few trains terminate at MetroCentre from Ashington. Newcastle is better known than the MetroCentre or Gateshead for that matter.

Hadfield and Glossop?

Hadfield is certainly a much smaller town, but is Glossop well-known outside of Derbyshire and the neighbouring counties?

Historically,
West Worthing instead of Worthing
South Croydon instead of East Croydon
When did trains terminate there incidentally? Not disputing it, just curious. In the 80s generally they'd terminate at East Croydon itself, Smitham (see below), or for a time Sanderstead.
Coulsdon Town instead of Purley
Isn't that two? It's the station which was called Smitham in my day IIRC, and there's Reedham in between.
