You are not obliged to supply the NI number or occupation.

In your posts above, you have given an explanation in which your wife believed that the card could be used by herself, and I understood you to be saying that this belief stems from your marriage (i.e. that a single card may be used by husband or wife) and that you had experience of using similar travel cards in other countries which could be properly transferred between husband and wife.
While that belief is wrong in respect of the Gold Card, it if it was her true belief that it was permitted, then it would be appropriate for you to say that in your reply as it is a matter of fact. It will also be consistent with the statement that the Inspector has provided.

Apart from that, I strongly advise you to make an apology and an expression of regret and to confirm that you have both learnt the true fact that the card is not transferrable even between husband and wife.
Then, and if it is your wish to do so, you may close the letter with a statement that you hope the Company would be willing to settle for a payment in compensation for their loss and their expense in dealing with the unfortunate matter.

And then hope that the Company will accept your apology and your offer; maybe they will, and maybe they won't. If not, then I expect the worse that will happen is a Byelaw Offence which is not as serious a matter as intentional fare evasion.

Interesting stuff but have they thought about how to tackle fare evasion on trains with this card yet? Whilst not everyone in this country is going to try it on we all know there are people from all walks of life and not just the scruffs who try it on so how will they stop 2 people from using it on the same train then?

On the buses, there is a 'passback' alert. I'm sure something similar will work on trains.

Rail gatelines already detect passback within so many minutes with the same ticket on paper and Oyster at least

Unfortunately (at the moment) they can't tell which direction you're going so if you nip out to get a drink or a paper from a shop in the station you trigger it going back in. This means it triggers often enough that most staff just let you through with no further investigation.
