What train is this picture from?

I was looking through the LNER website and spotted this:

But this picture hasn't got the same seats as the intercity 225s or the azumas, so I was wondering if anybody knew what train this is?

Yes, it has full length concave windows which don’t appear on any British trains, so likely a SNCF AGC. That would be my first guess too.

The window sill and window shape are definitely that of an SNCF AGC. I've never seen one with that red seating mind.

What do we think the reasoning is behind using a stock image with a train they don’t have, food they don’t have etc?

It's a stock photo from Getty Images photo library. The details give the location as France, which would tally with suggestions that it is an SNCF train.

I remember when I was in Sofia, Bulgaria in ~2017 and on loads of their metro advertising was an illustrator of an Arriva Trains Wales pacer.

Of all the trains for a clueless art department to pick.

I haven’t been able to find it again, but I do remember an advert from LNER featuring a mock-up 80x interior, only they’d swapped the Fainsa seats out for the seats used on Mark 4s!

Because it's way, way cheaper than setting up the actual photoshoot. Most companies (in all sectors) use stock photos if there's something that can be used or easily altered.

My own very large employer has brochures (and a website) full of stock pictures of people who don't work for the company in settings that the company doesn't use. It remains very successful at getting the point cross to its customers. Probably 99% of the travelling public couldn't care less that it's not exactly the right train. It's a train and it has a red seat and that's enough for most people.
