I was just looking at the West Yorkshire Metro website and am I correct in assuming that the Adult Train and Bus DayRover (£6.60) gives unlimited travel for a day on all the trains and buses in West Yorkshire (except for the restriction on starting after 9.30am on working weekdays)? And does this include zones 6 and 7 on the rail map (I think these are outside West Yorkshire)?

I saw the page on the NR website in the link above and noticed two things. Firstly, it says £6.20 there, but the WY Metro website says £6.60. Any reason for this difference (a minor one, admittedly).
Secondly, would it be valid on the Grand Central service between Pontefract Monkhill and Bradford Interchange? (The page on the NR website misses out Grand Central from the list of train companies).

Page probably hasn't been updated to take account of any fare rises yet.
I'm not sure, we had this debate in relation to a different rover and I can't remember what the outcome was. My personal recommendation (baring in mind I'm not a railway employee or anything) would be to try your luck and ask the guard before boarding they might well say yes, and even if they don't the fare between the two is only a couple of quid.

Just to confirm this, as I have actually done Doncaster - Bradford by GC using a return half Wakefield - Donny rtn and a WY Day Rover.

I was also considering riding Grand Central on this section, so thank you for confirming I can use a West Yorkshire Bus & Rail Day Rover here!
I've happily taken my nephew on GC Halifax - Pontefract with a Family Day Rover, no problems (ticket was checked just outside Halifax - I think the guard did ask where we were going).
