I noticed that mainly 317s, 315s and 379s are the only trains that use the West Anglia Line.

Is there a reason for this?

I would of thought 360s and 321s would have as well and why don't 317s or 379s ever go on the GEML?

Many reasons. Drivers traction knowledge and the fact neither 321s or 360s are suitable for Driver Only Operation on West Anglia routes to name but two.

317s do work one diagram on the GEML with Ilford drivers who are traction trained. 379s have enough work on West Anglia.

The eagle eyed would have spotted a 379 on a test train today at Shenfield though, which was recording overhead line equipment between Liverpool St and Shenfield.
