I know that steam locomotives are classified as 48s when they go on the mainline, but what about other stock? In particular I'm interested in what classifications the Eurotunnel shunters, visiting ICE 3 and the LaPoste TGV were classified as when they visited, if they had one at all.

It's class 98 for TOPS registered steam locos, rather than 48.
The Eurotunnel diesels are allocated TOPS Class 21, as 21901 - 910.

48s were variants of the class 47s.

Slightly off-topic, but in addition to Steam being 98 (not 48), Train Ferries were class as 99 to allow stock to be allocated to the 'locomotive' for the trip across the channel.
These were hauled through to St Pancras and remained on HS1/Eurotunnel infrastructure (not NR) at all times, AIUI, so may not have needed TOPS numbers at all (HS1 may have allowed them to run with their UIC numbers). They may also have been allocated numbers from the Loco-Hauled carriages series as they were hauled by the shunters and did not run under their own power.
