Hi,
Is it acceptable to go fast to Rochester and come back 3 stops, as a legitimate alternative to taking the stopping service to Dartford via Bexleyheath and changing at Dartford?

I don't think it is. You can always buy a ticket to Rochester and use the return portion to get back to Gravesend. If you wish to use the remainder of the ticket back to London, you will need to go direct rather than via Rochester.
