won’t they be able to see when I changed my address?
Why would they? The electoral roll takes time to update. Many people don't change it anyway; they also sofa surf between friends. The TOC is more concerned about getting their money, and providing them with an up-to-date address shows you're willing to cooperate.

I understand that, but as I already have a previous offence where I lied about my name. They have my description in the database under my old address, and I think it’s better to just say I lied about my address in order to get rid of any association between my previous offence and this offence?

What do you think?

You could just write them a letter that states:

With immediate effect my address is: (insert correct address)

It is a very fine balance between stating that you lied (explicitly) and just simply giving them the correct address.

As @Puffing Devil states they will be more concerned about getting the matter resolved (ie you paying up) than worrying about what would then become an irrelevant matter.

This, I think, is good advice. It’s not essential to explain why a different address is now being given - so don’t make the unnecessary (and untrue) explanation.

So do I not include anything about lying about my personal details?

-My letter would be
Dear Sir / Madam

My reference number for this case is ***

On the 3rd April I was stopped and questioned by a revenue protection inspector as I was unable to produce a valid ticket for travel.

With immediate effect my address is ****

That's a matter for you to decide. But I think it's important to avoid the earlier suggestion that you put

Since being stopped by your officers in relation to the above matter, I have changed address. It is now XXX

As that would be lying, which is never a good idea, and in this case has no obvious benefit.

Thankyou, I have sent the email now. Why do you think this approach is better?
Is this in order to not incriminate myself?

Also, another quick question. I am trying to calculate how much I might be charged if GTR find out about my annual gold card usage. My gold card usage was maybe used on 2 tickets for GTR, however it was mainly used for C2C and getting a cheaper travel card for TFL. Will they alert other train companies or will GTR only be able to access train tickets I have bought from their platform?

GTR will be able to access ticket purchases form any rail ticket seller - so if they investigate other purchases (as they probably will) they will find the gold card evasion on C2C etc. This is done under powers to prevent crime and all the train operators act on behalf of each other in this regard it seems. So you should prepare for that financially at least.
