Is Travelling short from Bolton to Nottingham allowed on a Ulverston to Nottingham ticket?

Yes on an Open Return this is no problem as you can break your journey on both outward and return portions.

At £80.50 that ticket is a rip-off!

Next time consider Nottingham-Sheffield (£16.80) and Sheffield-Ulveston (£44.10 "Off Peak" but valid on any train), saving 25% (£20) and valid on exactly the same trains and at any time!

And yeah you can break your journey or cut it short.

The only time you can't use an 'Off-Peak' is before 9:30am(ish?). So if you're talking about the evening peak, then an Off-Peak is totally valid then . The only tickets you need to be careful of are 'Super Off-Peak', which have much tighter restraints on them.

Ulverston-Nottingham off-peak return tickets are valid on any train, except those scheduled to depart before 09:30 Mondays-Fridays. This restriction applies to both the outward and return portions. Therefore, with the times you have quoted, the £57.50 off-peak return is perfectly valid.

Is that 08:00 or 20:00 (8pm)?

This journey isn't being done same day as it takes at least 4 hours each way and leaving after 12pm and arriving back for 8pm gives no time at the destination.

It is impossible to arrive at Nottingham before 08:00, so I'll assume it's a trip that lasts a few days and leaves Ulverston on the 15:41 service, so there is no issue of it being a peak time and an Off Peak ticket is perfectly fine.

Not always, Cheltenham - Birmingham Off-Peak Day isn't valid before 09.30 and also between 15.30 and 18.15. There are other Off-Peak tickets that are valid at any time, and others with different restrictions.
