Bury or East Didsbury are almost identical examples (except they only has 2 platforms unlike Altrincham’s 4 overall)If we can maybe include the Manchester Metrolink system, trams terminating at Altrincham seem to alternate between platforms 1 and 2, at least during the day. Typically there's a service arriving from the Manchester City Centre direction every six minutes.
I’d suggest the Waterloo end doesn't operate as a conventional 2 platform terminus (as in the context of this thread), but it is effectively a through station albeit without passengers. The trains terminate in and reverse from a single siding in the depot.Both Waterloo & City Line stations

Some of these DLR terminals very weirdly have 1 min turnarounds. It will even sometimes look as if they aren't using one of the platforms.DLR, Overground, Elizabeth Line:

Heathrow Terminal 5 is two platforms shared between Elizabeth Line and Heathrow Express, combined that makes 6 trains per hour.Edit: I see the OP has specified minimum 6tph, so that means Watford, Starr Gate, Heathrow T5 (Elizabeth) and some of the Metrolink termini no longer qualify.
St James (and Airport for that matter which is a very similar setup) have been 5tph for a long time now so wouldn’t count. However, at some point in the next few years that should increase to 6tph which would make both of those stations count.St James on the Tyne & Wear Metro is a 2 platform terminus (unfortunately with no possibility of extending westwards anymore). Ostensibly trains arrive and depart every 8 minutes although during the current replacement of the old unit by the new 555s there are gaps in this service.

Moorgate has up to 10tph in the peak though, and I’m not totally sure what ‘large parts of a weekday’ means exactly.Only 4tph out of Moorgate GN platforms at the moment, so with that as the minimum service level, only counting those that are the end of the line (so no Hainault for example):
