I'm pretty sure that in the past though not any more (back in Wessex Trains days, maybe even Wales & West), Exeter St Davids used to have two trains depart simultaneously in opposite directions from the same platform! One train heading up towards Barnstaple and the other heading towards Exmouth or Paignton.

On Merseyrail alone:

Birkdale (sometimes)
Hightown
Waterloo
Bank Hall (usually)
Sandhills (common)
Maghull
Kirkdale
Moorfields
Liverpool Central
Brunswick (occasionally)
Hamilton Square

I'd imagine James Street when the loop is open too

Being slightly pedantic, the Maghull trains are timed 2 mins apart. The earlier Liverpool bound train is rarely late having only just started its journey. The level crossing barriers tend to stay down and do both trains but it's very rare for them both to be in the platforms at the same time.

Worksop has the Sheffield / Lincoln services crossing over there. Sometimes they're the same time, sometimes a minute or so apart. Neither are particularly well timed for the Nottingham train.

The majority of Northern services at Dewsbury cross there despite both running entirely on at least double track routes. The Huddersfield pair at around xx16, and the Manchester via Brighouse at around xx45.

S Yorks, usually
Rotherham Central has a lot of xx27 to Leeds/xx27 to Lincoln departures.
Rochester has regular xx51 Victoria-Dover and xx51 Dover-Victoria departures, as well as xx31 St Pancras-Faversham and xx31 Gillingham-Charing X departures.
Woolwich Arsenal has simultaneous departures at xx09 and xx39, and I imagine a lot of busy London suburban stations will have them if you spend a while looking.

Services - including intercities - on the Cotswold line cross here in Evesham several times a day. In fact, more often than not.

Edit: although looking at the timetable, is appears that the Worcs service is usually supposed to depart about a minute before the London service pulls in. In practice, however, they are usually at the platform at the same time.
