Let's say I travel Waterloo to Kingston and then back to Vauxhall, tapping in Waterloo and out at Vauxhall. The purpose of my travel is to deliver someone a package, who meets me at Kingston, and I pass the package over the gate

Have I committed any offence?

As long as you have a ticket (Travelcard) or Pay as You Go balance on your Oyster Card such that one or both will cover your whole journey, and you have touched in, then no.

Waterloo to Vauxhall has a maximum journey time of 90 minutes daytime on a weekday, 100 minutes evening and Saturday, and 110 minutes on Sundays - see https://oysterfares.com/fare-finder/

You need to ensure that you don't exceed this journey time. Waterloo - Kingston - Vauxhall could potentially push close to that maximum journey time and the risk of two incomplete journeys.

Also, be wary of any subsequent touch in to the system which forms an out of station interchange.

That is true but incurring a maximum fare is not, in itself, an offence.

No offence would be committed though if gripped on the way back there could be some awkward questions as to why you are travelling in the wrong direction.

How would those awkward questions go? Would the answer not be 'there is nothing to say that I have to be travelling away from the place I touched in at all times'? or 'It is up to the Oyster system to charge me the right fare for the place I touch in and touch out'.

Using contactless would avoid any such questions, of course - not that there is any obligation to answer questions, or anything you would be doing wrong.
