I'm travelling from Chester to Crayford on Friday, on an offpeak return. The routing given is via Euston (arrive 0802) and London Bridge (depart 0859) (there is no 'Maltese Cross' on the ticket but there is some kind of sword-type symbol which I assume means the Underground is included). Anyway I really don't fancy the tube at 8am, and I'm fit enough to walk - but then it makes more sense to walk to Charing Cross and catch the Crayford train from there. Is this allowed even though the itinerary says i should go to London Bridge?

Yeah that would be totally fine, since it's an off peak return you don't have to stick to the exact itinerary and Charing Cross is a suitable London Terminal to travel to and from Crayford so that works.

The ‘sword type symbol’ (or dagger) is definitely the equivalent of a Maltese cross. Many (most?) ticket machines don’t seem to be able to print a realistic Maltese cross.

In all honesty, the Northern line isn't that busy on Friday mornings; there's a good chance you'll have a seat. Friday evenings and weekends are far busier.

If you prefer, you could walk to St Pancras and take Thameslink to London Bridge. Again, no difficulty getting a seat on Friday mornings. It's a fairly quick walk from Euston if you take the 'back route' indicated by the green signposts towards Kings Cross/St Pancras; you end up right next to the entrance to the Thameslink platforms.
