What do they mean by do you have any experience of health and hygiene?

Thinking with simple common sense in this, they probably want you to have an understanding of general cleanliness and whether you have worked in an environment where cleanliness is important.

A basic knowledge of how easily viruses and bacterial illnesses can be transmitted through poor hygiene, such as not washing hands after using the toilet, would probably be useful. Think about all the places you’d touch on a train with your hands or bare skin in general, or where you may place food, and therefore surfaces that would need particular attention to cleanliness, especially in a public space.

Alternatively, have you worked in a place where you had to use different cleaning agents in food preparation areas (disinfectants as opposed to simple cleansers)? I've known this to be the case in supermarkets and cinemas, for example.

Or any work related to food preparation, for that matter...

Namely: Control Of Substances Hazardous to Healh regulations. These have a very broad range, though, from the minor to the enormous. (My first introduction to the term was on work experience at a nuclear power station!)
