When HS1 is closed, trains run fast to Gillingham (Kent)

Does this appear in the GBPTT? Don't forget temporary timetables for engineering works (such as at weekends) don't count unless it's for a sustained time period that appears in the GBPTT.

I can find a few services from Cannon St that skip London Bridge, but not non-stop to Gillingham.

(Happy to be wrong though!) :D

1.....These routes and services must be on the timetable at the time of posting.Temporary disruptions, such as landslips or flooding, should be ignored unless the disruption period exceeds one month. In the event of long-term engineering works, these should be ignored unless they span a timetable period and are noted in the National Rail Timetable. Station closures less than a month long should also be ignored. Any stations which are pick-up or set-down only count as normal stops to avoid confusion.

2.....You cannot use any freight lines, but you can use any line that has a passenger service at least weekly (not every 3rd Monday etc).

These two of the quiz rules are useful to be aware of.

If I understand correctly, the move to Gillingham is to be found incorrect.
However, looking on RTT, I could find only one (!) service which wasn't Empty Coaching Stock, which does go from Cannon Street, and passes London Bridge.
It departs at 7:54, is for the whole timetable period, and would go straight to Dartford. http://www.realtimetrains.co.uk/train/W22107/2015/07/23/advanced

Could this be then the next (or only) allowed move from Cannon Street?

Having double checked from another source, you are indeed correct that this is a timetabled fast non-stop service
