Does it matter if I tap in with the apple wallet on my mobile then tap out with my Apple Watch?

I think TfL treats them as though they were separate cards.

I understand that if for example you have a contactless card, the account of which also has a mobile device registered to it that can be used for payments then the mobile device gets its own "phantom" card number assigned to it.

TfL will treat them as separate payment methods, so while it's a good way of paying for another person using the same card account but individual payment methods, touching in with one and out with the other will lead to incomplete journeys registered.
