If I am holding a super off-peak return ticket (London Paddington<=>Cardiff Central), can I break my journey at Bristol and continue there?

The restrictions for this ticket are shown here:

The restrictions on BoJ are:
Restriction YU said:
Overnight Break of Journey (see Break of Journey notes at start of this section) - restarting journey
from an intermediate station:
On day 2, restrictions as above apply and journey must recommence before 1200.

So, yes, you may break your journey on both the Out and Return journeys. The train you get from Bristol must comply with the time restrictions in the text (i.e. be "Super Off-Peak" if it's come from London).

I assume the quoted text refers to breaking the outbound (that if continuing the following day it must be before 1200) - surely on the return the break can be for any time during the period of validity? Can anyone confirm this?

I thought this only applied if you joined the train at London or Reading.

If travelling from Bristol to London you must travel between 0200 and 0510 or after 0945.
