Manchester Victoria is also a relatively large commuter hub whose service is currently diesel-only (if we exclude the Metrolink) but which is included in an electrification project.

Funnily enough, the next station to the west (i.e. Central) also had remains of an extra platform effectively removed ecently.

Lichfield TV and Barking have been served by mk2-based EMUs at some point in the past. (I think)

Upminster also has a specific platform for a specific service (Gospel Oak service at Barking and the Romford shuttles at Upminster)

Should add that the platforms in question are p1 at Barking and p6 at Upminster.
