St pancras to Peterborough 700 or 387 ??

From St Pancras, will always be a 700.

Everything which runs through the Thameslink core these days is a 700.

As others have said, 700 if it's running through St Pancras. On the King's Cross starters/terminators you'll find 387's during the week and a mix of 387s and 700s on Sundays.
