I have a disabled railcard as well as a RST online card, if I wanted to travel with a friend/family, would they be allowed to use my disabled railcard?
Disabled railcards allow two people to use them.

For instance, if I wanted to make this journey, would it be okay, my friend using the 'companion' portion of the disabled railcard.

The TnCs of the railcard are ambiguous about this, so it’s anyone’s guess.

The internal version of national rail makes it explicitly clear that this would not be permitted. As @AlterEgo says the public T+Cs are less clear.

It is possible for your PRIV to be endorsed with the wording "and an attendant (when required)" if you are also disabled and broadly meet the disabled Railcard criteria, which you obviously do if you have one.

I'd email RDG Staff Travel and ask them how to go about this, but I would expect them to be fairly helpful.

(Although I do caveat this with the warning that if you're Network Rail, I'm not sure if this is a strict entitlement - but I'd imagine it's a reasonable adjustment that they'd at least consider).
