Rolling Stock horns

I am a bit confused by the different varieties of horns on rolling stock. Why do Southern Region stock have flat-sounding "raspberry horns" and why do some EMUs (1st gen AC(302-312) and DC (501-506) EMUs) have a pedal to operate them instead of the usual lever?
