Is there an opening date fixed?
Will the new station have ticket machine(s) which are more user-friendly than the the one at the historic rail station?
Have I rightly understood that for a Hoek to Schiedam (or beyond on RET) journey, a RET 2-hour (or some such?) ticket is (marginally?) cheaper than using an OV chip card?

Yes-and in fact with these single use 2-hr tickets one can go till far end of metro-incl whole line till den Haag.
There are in fact many more cases-but for bus/tram only where a one-price ticket is after some distance cheaper as the chipcard-which counts and charges every KM.

Just today it was announced the opening is delayed till possibly October. During testing, a minor issue on the route to the beach was detected: some poles for the OHLE need to be fixed better to their foundations.
When that's done the final tests can be done, followed by applying for a permit to operate the extension, which alltogether takes about 7 weeks. (source [in Dutch])

The ticket machines on the new station will probably be of the same type as on the temporary station. AFAIK RET has only one type of ticket machine. Alternatively one can purchase a 2-hour or day ticket as a barcode ticket, either online or via the RET Barcode app, to avoid the need to use the ticket machine.

Used this route yesterday to get the night boat to Harwich. Everything very smooth with the boat operation and a very pleasant way of travelling. If anyone is travelling before the new opening please be aware that it's a hell of a walk from the temporary terminus to the Stena check in. If it's raining be prepared to get very wet!

I had arrived at Rotterdam (Blaak) from Germany via Arnhem/Dordrecht with a ticket sold by DB, had a bit of a walk around, and as I didn't have a Chipkaart I was advised by staff to get the 2 hour ticket for €4. The machines, despite having an English language option, are not particularly clear.

Also my advice is not to cut it too fine for a late check in as there seemed to be a 30 minute gap at times for services extending to the temporary terminus. Then you need an extra 10 mins to walk to the check-in.

The service to Hoek van Holland is indeed half hourly in the evening. During the day it's every 15 minutes in summer, but from September till June every 20 minutes on weekdays and every 30 minutes on weekends.

Google Street View surveyed Hoek van Holland last month and you can see the train at the temporary platform, and also get an idea of the distance to the terminal

the station at the terminal building is being replaced?
The platform directly next to the Stena terminal (one of the former bays where the long gone international trains departed) has always been temporary.
In the mean time a new station has been built at almost the exact spot where the curved platforms towards Hoek van Holland Strand used to be. Currently the new station is being connected to the existing line, therefore a temporary platform was built next to one of the sidings to avoid the need for bustitution.
