Do the following railtour operators employ their own on-board catering staff? Or do they use a third party?

Whichever employment method is used, do people know what roles are available and where/how they recruit please?

West Coast Railtours
Pathfinder
UK Railtours
Retro Railtours
Northern Belle

Do some have volunteer stewards? If so, again, where/how do they recruit please?

Thanks in advance.

I did a few shifts for Northern Belle some decades ago whilst they were short. Paid extremely well but was hard work.
