HOTNAT (hop on the next available train) is the agreement between HS operators that if one train is delayed and you miss your connection, your ticket will be valid on the next train.

The basic conditions are here:

However - what counts as a connection, if I have bought the tickets from different sources? For example, between DB and Eurostar at Brussels is there a minimum connection time specified anywhere?

And where the delay is such that I miss the last train of the day, does it simply mean that I can travel on the first available train the next morning? If the first train is at 5am or something, can I choose to travel at a more sociable hour? And I assume that there is no obligation to sort out overnight accommodation for me, in such a scenario?

The Railteam website is the best you'll find AFAIK.
Tickets bought from different sources are included. The minimum connection times are included in the timetables sent to the European Timetable Centre (MERITS) so in practice, if e.g. bahn.de offers a certain connection, then the minimum connection times are respected. If they're too short, then that was in the data the operators themselves sent (e.g. Trenitalia have a few such cases where they fail to send correct data).
Overnight accommodation is not included in HOTNAT.

Loking at the Railteam web site, the criteria are: the missed connection must be between two high-speed trains within the Railteam alliance; the feeder train is delayed or cancelled; the change takes place at a HOTNAT station; and then: 'your eligibility to HOTNAT depends on the capacity of the train in question, as HOTNAT is a a Gentlemen's Agreement/goodwill arrangement'.
You can't just 'hop on the next available train' - you have to get authorization.

So not as good as it first sounds...

Obviously those trains which are compulsory reservation you will need a reservation. The next available train will be the next train with a reservation available.
