As a last hurrah of my Railcard before I'm no longer eligible for one I'd like to take advantage of one of the cheaper berths on a sleeper train.

Let's say my Railcard has a valid until date of 1 September. If I use it for a Sleeper service which leaves at 10pm on the 1st and arrives at my destination on the 2nd at 6am, will my railcard be valid?

I believe that's fine.

Fares on Sleeper services have always taken validity of day prior to midnight ( with exception of All Line rovers and BR PRIV boxes allowing dating of "next day ") As you are just completing journey I can't see an issue with this.
