Can a single individual travel using a Family and friends railcard? I'm thinking as I am likely to be travelling half the time with my partner and kid and half the time on my own.

No. Minimum 1 adult and 1 child. Max 4 of each.
To add to that, the Child must be 5-15 inclusive (or pay for the equivalent child fare if under 5)

Although nothing to stop you purchasing a discounted ticket for a child aged under 5.
16 year olds can also travel using a discounted child ticket if they were 15 at the time the Railcard was purchased.
