Paddington - Maidenhead

How busy would the trains be around 1730 - 1800pm on a weekday? I'm thinking of either getting a standard or first ticket.

Packed I would have thought, the Maidenhead trains at that sort of time are prime commuter services You should get a seat in Standard with a bit of forward planning/early arrival at Paddington though.

Most of the services are packed but if you go slightly earlier or slightly later and get one of the through trains to Henley on Thames you stand a better chance. They go around quarter past 5 and 6.

They tend to get caught up behind slower services but it's not so bad if you have a seat.

Yes, they'll definitely be harry packers! Don't bother with first unless you get an hst service- marked in the paper or pdf timetable. I think there's a Cheltenham service around this time, possibly some of the Oxford hsts stop too.

That said, a Reading terminator or Henley train shouldn't be too bad after Hayes or so.

Just to note, all the trains listed by sonic2009 are valid on Off Peak tickets except the 1750.

Related to this, I have a Gold Card 1st from East Croydon - London Bridge only. I know that Gold Card standard tickets have a discount but does my ticket include a 1st class discount? This page does not mention anything.

Also, I dont think I can use a 1st class supplement as I'm travelling from London between invalid times?

No discount on 1st class tickets unfortunately, apart from the special £5 upgrade (which as you say isn't valid at this time out of London).

You can if you want to. First class within the network area isn't especially worthwhile though in my opinion.
