Here are two old West Yorkshire MetroTrain maps from 1989 & 1990 for your interest

In 1989 Wakefield Line trains are shown as running to Scunthorpe (did they?)

Swinton, Dodworth, Berry Brow, Steeton and Silsden shown as opening in 1989. Altofts still open as were Park, Miles Platting, Attercliffe and Brightside. Blackpool trains must have stopped regularly at Rose Grove

In 1990, Poulton-le-Fylde has been squeezed in just before Blackpool. Walsden and Meadowhall shown as opening 1990 but also interestingly Thornhill opening 1991. Huddersfield Line trains shown a running to Chester and North Wales (did they?)

Yes, the Leeds to Doncaster service extended to Scunthorpe for a year or two. It was split again when Leeds to Doncaster was electrified (using class 307's for the local service!)

Blackpool trains must have stopped regularly at Rose Grove

Rose Grove was a regular stop up until the early 1990's to allow easy changes to/from the Colne service.

Huddersfield Line trains shown a running to Chester and North Wales (did they?)

At some point (Sprinterisation maybe?) some of the Wakefield Westgate to Huddersfield stoppers began being operated from Manchester and ran through to an assortment of destinations the other side of Manchester, most notably Llandudno.

Trans Pennine services once ran through Huddersfield to North Wales; would have to check old timetables to see when that finished.

As far as I am aware, Trans-Pennine expresses started running alternate trains to Liverpool and North Wales in May 1983 and continued until May 1989 when the services were changed to serve Piccadilly instead of Victoria in Manchester (and as a consequence went to Liverpool via Warrington instead of over Chat Moss). At the same time a new Stalybridge-Victoria-North Wales local service was introduced to replace the lost Welsh connection. The following year (i.e. May 1990) this was linked to the Marsden to Wakefield Westgate service to give additional travel options at little extra cost. Most notably this brought a full daytime service back to Greenfield and Mossley stations although they are not in the Metro area. This North Wales link (Wakefield to Bangor on a Pacer - joy!) didn't last too long, but at the moment I'm not sure when it finished.

Annoyingly the timetables in the same publication as these maps never show any codes of where they go after they reach the main destination. So they only show as going to Manchester (or York in the opposite direction)

I’ve got one Metro publication where it was even worse and it showed the timetable literally in West Yorkshire only. So nothing went beyond Todmorden, Marsden or Denby Dale etc.

Having a Hornby class 155 Metro Train Sprinter and an ex-Metro Train Northern class 158 from my childhood, I've always had a soft spot for the brand. Shame they couldn't manage full electrification, 15 minute frequencies.
