Are there any of the NS600 shunters still working in Holland, and would they be easy to photograph? Thanks

There are definitely some still in operation. The page for this class on treinposities.nl has several photos as recent as from October 2023.

Seen the 9702, operated by Rail Force One but still in orange Locon livery, quite recently hauling a PON-train from the PON car distribution facility in Leusden back towards Amersfoort Central station.
That's a not very frequent train, though the Amersfoort to Leusden branch line has a nice scenery after leaving Amersfoort (example photo of a different train on that branch) and is quite accessible. The return working to Amersfoort usually has an RFO ex-NS class 1600 directly behind the shunter.

Most difficult to photograph are the RailPro ones probably, as their facility in Crailo is in a quite inaccessible location.

Saw one on a trip working through Amersfoort a while back, if that's of any help?

Ribble Steam Railway at Preston has ex NS No. 663 if you want somewhere closer to home!
My apologies for sounding pedantic, but noting that the op is based in Norwich its perhaps more likely that Amersfoort is a touch closer to him than Preston? certainly if measured in a straight line ;)
