Struggling to find myself something that would allow the following :

Northwich - Leeds Saturday 21st
Leeds - Castleford Saturday 21st
Castleford/Wakefield - Northwich either via Leeds/Manchester or Sheffield/Stockport Sunday 22nd

Most fares I'm getting are either splitting at Knutsford or Huddersfield depending on the journey

Happy to take alternative tickets if need routeing etc.

1 adult
1 child

Family Railcard

* I have a disabled Railcard but unsure whether you can use the discount for companion with child.

Is this a problem?

You can try booking through Trainsplit which allows you to specify via points and breaks of journey.

It's an adult companion you get a discount for.

I didn't think about using the via points! Silly me.

I thought that the disabled was adult companion, so thanks for confirming.

Looks like an off-peak return Northwich-Castleford with a F&F railcard is £40.55. You can save a couple of quid (cheapest I saw was £37.58) using one of the suggested splits offered by the forum's ticketing service - all using anytime singles and off-peak returns, which allow for full flexibility on the day of.

(I bow to more experienced posters if there's better value out there)
