On Wednesday I'll be going to the Borussia Mönchengladbach vs Manchester City match, and beforehand I'll be travelling to Cologne, and then on to Dusseldorf. What validity will my match ticket have on these trains?

If it does, it should have the VRS and/or VRR Symbol on it and the words gültig in Zügen des Nahverkehrs. And even then only in trains from/to Mönchengladbach.
I recommend a Schöner Tag NRW ticket if you do the trips on the same day.
