Hi, I recently received some National Rail vouchers. I know it's a long shot, but can they be used on Eurostar Journeys?

No. Eurostar tickets aren't a National Rail product. You could, however, use them on a ticket to or from London CIV from your local station allowing you to change to a later Eurostar train if your domestic train is delayed.
