Many of the country infrastructure operators include maps of this sort in their annual Network Statements. For example, that for Belgium can be found on the Infrabel site, here: https://infrabel.be/en/networkstatement

There's then links to the main statement and also various appendices, including maps. Each country will vary in the format, as you'd expect. The Belgian one is pretty good as it colour codes the map by TBL1, TBL1+, TBL2, TVM430, ETCS etc.

As you say, sadly not much coverage of train protection systems in the UK. However, all source data is taken from openstreetmap.org and its easy to add information there. For anyone with knowledge of the lines, please consider doing it. Information on the openstreetmap.org "tagging" (classification of locations) for railway lines here:

I don't have an answer to your question, but the border between the Danish and Swedish systems are on Pepparholmen.

Worse than that, what it does have is wrong. The Great Western Main Line does not have ETCS to Bristol.
