At least with 3+2 layout there are more seats and no room for an overpriced catering trolley to block the aisle.

One extra seat where you could’ve held at least 5 standing passengers and not cause a bottleneck in the middle of the carriage

More seats, yes..., but the middle one in the bay of 6, can be quite awkward.
My experience was that the middle seat was usually the last if a group of strangers were around the bay, but that it would usually fill up before people choose to stand.
